MANGO TANGO TACOS FOR TWO

Fish

  • 2 (6-ounce) tilapia fillets (frozen and thawed is fine)
  • 1 tablespoon olive oil
  • 2 tablespoons Caribbean jerk seasoning
  • 1⁄4 teaspoon kosher salt
  • 4 yellow corn tortillas

Salsa

  • 1 cup diced mango
  • 1⁄4 cup minced red onion
  • 
2 tablespoons chopped fresh cilantro
  • 1 tablespoon minced Serrano chiles
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1⁄4 teaspoon ground red pepper (cayenne)

Preheat grill to medium-high heat. Brush tilapia evenly with oil; sprinkle both sides with seasoning and salt. Grill 3 minutes per side or until fish is cooked through. Add tortillas to grill; cook 1 minute per side or until lightly charred.

To prepare salsa, combine all ingredients in a small bowl. To make tacos, flake fish and divide evenly between tortillas; top with salsa. Serves 2.
