Apple Fennel Slaw Recipe

It is always a blast on the set of Hallmark Channel’s Home & Family, and today’s episode is no exception!  I am in the kitchen cooking with Debbie Matenopoulos and Susan Lucci sharing one of my favorite meals.  A regular go-to, this slaw is healthy and so good!

 

Apple Fennel Celery Slaw

Ingredients:

• 1 large Honeycrisp apple, julienned

• 1 fennel bulb thinly sliced (not the stems)

• 2 tablespoons of fennel fronds chopped

• 5 good sized celery stalks

• 1 large lemon

 

Directions: 

Thinly slice (julienne) the apple and fennel bulb. Chop fennel fronds and reserve 2 tablespoons and discard the rest. Thinly slice the celery stalks on the diagonal and chop the inner leaves. Put all ingredients in a Ziplock bag, add the juice from one lemon, and shake well to combine.

As seen on Home & Family with my “Paleo Steak and Avocado Mash,” but this slaw is great as a snack on it’s own or can be served with so many things!
