PIZZA DIP AND HOMEMADE BREADSTICKS ©copyright – all rights reserved Marci Arthur

For dip:

  • 4 ounces cream cheese, softened
  • ¼ cup Hellmann’s mayonnaise
  • ¼ cup sour cream
  • ½ cup Parmesan cheese (freshly grated is always best)
  • 1 cup mozzarella cheese – grated
  • 1 cup pizza sauce
  • ½ teaspoon garlic powder
  • 2 tablespoons fresh basil, snipped with scissors, finely
  • Sliced pepperoni – about one cup (1/2 of which is finely chopped)
  1. 1.  Mix the softened cream cheese, mayonnaise, sour cream, and ½ of the Parmesan cheese, and ½ of the mozzarella, in bowl of electric mixer fitted with flat paddle.  Beat until thoroughly combined. Add garlic powder, and snipped basil and the finely chopped pepperoni. Spread mixture into a pie plate.  Top with the pizza sauce, and the rest of the cheeses, and spread the remaining pepperoni over the top.
  2. Place in a preheated 350 degree oven and bake for 20 to 25 minutes.
  3. While this dip is baking, make bread sticks:

  • 1 loaf of frozen bread (I use Bridgeford but you can use whatever you like)
  • 1 stick of butter (if unsalted, add two turns of grinding salt)
  • 1 teaspoon garlic powder
  • ½ cup freshly grated Parmesan cheese
  1. Thaw bread dough on your kitchen counter until it is pliable but still cold.  Cut it with kitchen shears or a very sharp knife, (across the loaf as you would slicing a loaf of whole bread- not long ways).  You should get at least ten pieces.  Take each and roll between the palms of your hands like making a snake with play dough. They should each be about 9-inches long.  This sometimes take a lot of rolling and stretching.
  2. Melt your butter in a shallow dish in the oven set on 375 degrees, size about 11 x 7-inches works well (melting will just take a few minutes).  Mix in garlic powder and Parmesan cheese and mix well.
  3. Roll each piece of dough in mixture until well coated.  Place on a parchment lined large baking sheet.  Space each piece far enough apart to allow for rising because they will triple in size.  Place cookie sheet in a warm place and allow to rise for 2 hours.
  4. Place in middle rack of oven and bake at 375 degrees until they are browned well.  This usually takes about 12 to 15 minutes depending on how your oven cooks. Do not overbake………….THIS IS WHY I LIKE CONVECTION BAKING – IF USING CONVECTION CUT TIME BY AT LEAST 30 PERCENT.  WATCH CAREFULLY.
